Beef Stew

Ingredients

3 ½ lbs beef cut for stew ¾ -1 lb of potatoes ( peeled and cubed to the desired size)4 medium-size carrots ( peeled and chopped to the desired size)3 ½ lbs beef cut for stew

  • ¾ -1 lb of potatoes ( peeled and cubed to the desired size)
  • 4 medium-size carrots ( peeled and chopped to the desired size)
  • 2 medium yellow or white onions ( sliced) ( divided 1 n )
  • 2 medium tomatoes ( diced)
  • 3 cloves of garlic ( minced)
  • 3 green onions ( 2 cut into 3 and 1 chopped for garnish)
  • ½ of red, green and yellow bell peppers ( sliced )
  • 2 tbsp tomato paste
  • 2 sprigs fresh thyme
  • 1 thick sprig rosemary
  • 3 bay leaves
  • 1 tsp Jamaican browning ( or low sodium soy sauce
  • ½ cube beef bouillon
  • 1
  • 5 1/2 cups of water
  • Salt n pepper to taste
  • Few dashes of hot sauce ( use preferred hot sauce0
  • Salt n pepper to taste
  • 1 tbsp onion powder
  • 1 tsp paprika
  • 1 tbsp garlic powder
  • 1/3 cup all purpose flour
  • 3 tbsp olive oil
  • 3 tbsp butter

Directions

In a medium size stock pot with a lid, heat olive oil and butter on medium high heat. In batches brown each piece of meat, about 2-3 minutes on each side, set aside till done. When done in same pot not cleaning, sauté  one of the sliced onions with garlic, about 3 minutes, then add the meat back in sprinkle flour over meat, and stir to combine really well, cook stirring for about 3 minutes, then add tomato paste, stir and mix all ingredients really well, add the wine   and 1 cup water, stir and combine really well. Cover and cook for 30 minutes. Then add remaining vegetables, onions, tomatoes, bell peppers, thyme, rosemary, and potatoes and carrots, sir and combine really well,  add hot sauce add remaining 4 ½ cup water, cover and cook for another 45 minutes.
