Ingredients

  • 4 lbs leg quarters
  • 1/3 cup jerk marinade
  • 1 ½ tsp olive oil ( divided 1 n ½)
  • 3 tsps brown sugar ( divided 2 n 1)
  • 1 tsp ground all spice
  • ½ tsp cinnamon powder
  • ½ tsp ground nutmeg ½ tsp salt
  • 1 tsp black pepper
  • 1 tsp poultry seasoning
  • 1 tsp garlic powder( I used roasted garlic powder, regular is fine)
  • 2 tbsp soy sauce ( divided 1n1) ( low sodium
  • 1 tsp vinegar ( I used balsamic, you can use apple cider)
  • 1 cup ketchup
  • Juice of 1 lemon

Instructions

  1. Clean chicken, remove skin if you choose. Make some slices into each chicken pieces. Fill a large bowl with water and add the lemon juice soak chicken in it for about a minute or two. Rinse and remove. Add jerk marinade in a small bowl, add all the dry ingredients in another small bowl, except only 1 tsp of the brown sugar, combine really well, then pour into the bowl with the marinade, add to the marinade also 1 tbsp soy sauce, and 1 tsp olive oil, mix really well to combine. Cover and marinade in the fridge at least 2 hours, over is best.
  2. Preheat oven to 400, using a small kitchen brush, later your baking dish with remaining 1 ½ tsp olive oil, layer chicken in pan, bake uncovered for 45 minutes.
  3. The sauce for chicken in a bowl combine the remaining 1 tbsp soy sauce, the ketchup, the vinegar, and the remaining 2 tsp brown sugar, and mix to combine really well. Remove chicken from oven and brush sauce on each side of each pieces of chicken, if there is any remaining pour all over the chicken. Bake for another 45 minutes .
