  • Ingredients
  • 2 lbs yukon gold potatoes (peeled, washed and diced, I like to dice them more larger then small, so they do not get too soft when cooked
  • 1 medium size onion finely diced
  • 1 cup of sweet corn ( I used canned corn, drain and washed)
  • 1 cup of peas ( I used canned peas, washed and drain)
  • 1 cup of mayonaise
  • 1/2 cup honey mustard
  • 1/2 cup finely chopped celery
  • 1 tbsp black pepper
  • 1 tsp salt

  1. In a larger stock pot, covering potatoes with water and salt cook for 12-13 minutes, till potatoes are fork tender not too cook, because you do not want your potatoes to turn mushy then you will get mashed potatoes. In another bowl add combine mayonnaise,honey mustard, and mix to combine really well.Put in the refrigerator to chill, while potatoes are cooking. When potatoes are done, drain and cool off. Pour in a large bowl, add the corn, peas and celery if you use, and using a large spoon combine really well, add the black pepper and the mayonnaise mixture and combine really well.
