  • 1 (5lb roaster chicken)
  • 1/4 tbsp olive oil
  • 1/4 stick of butter ( melted)
  • 3 garlic cloves ( minced)
  • 1 large sprig fresh rosemary( remove the leaves of 1 and chopped finely)
  • 3 sprigs fresh thyme
  • 1 tbsp garlic powder
  • 1 medium size onion ( cut into 4)
  • salt n pepper to taste
  • 1 tsp cumin powder
  • 1 1/
  • tsp chili powder
  • 1 1/2 tsp cayenne pepper ( you can use more or less
  • 2 tsp creole seasoning,
  • 1 tsp old bay seasoning.

  1. In a small bowl, add the melted butter, olive oil, the finely chopped rosemary and all the dry ingredients and mix very well. You should have almost a paste like consistency. Wash and clean your chicken , removing the giblets from the inside. In the cavity of the chicken place the cubed onions, the thyme sprigs and the remaining 2 sprigs of fresh rosemary. Rub the outside of the chicken really well with the mixture, being sure to properly coat, and lift the skin from the breast placing some underneath. I also made slices in the legs and thighs and add a little mixture in each also. Cover and place in the fridge to marinade at least 2 hours. Preheat oven to 400, and bake uncovered for 2 hours. Removing it from the oven after 1 hour and base with juice in the pan and again 15 minutes before it is done
