  • • 2lbs boneless skinless chicken thighs
  • • ½ of a large onion ( sliced) this is optional
  • • 3 cloves of garlic ( minced)
  • • 1 small piece of fresh ginger ( finely diced)
  • • 1/3 cup light brown sugar
  • • 3/4 cup ketchup
  • • 1 tbsp vinegar ( I used balsamic) can use apple cider
  • • ½ cup soy sauce ( low sodium)
  • • 1 cup water
  • 1 tbsp red pepper flakes
  • Salt n pepper to taste
  • 1 tsp garlic powder
  • 1 tbsp red pepper flakes
  • 2 tbsp olive oil
  • Juice of ½ lemon

  1. Soak the chicken in water and lemon juice for about 2 minutes. Cut chicken in bite size or desired size. ( I like to cut them a little bigger than bit size. Pat dry chicken pieces with paper towel or clean kitchen towel . Season with salt , pepper and garlic powder. In a large skillet with a lid, heat olive oil, be sure the oil is hot before adding chicken. Brown chicken pieces on each side, just till you get a nice golden color. Set chicken aside on a plate. In the same pan add sliced onions and minced garlic, sauté till onions are translucent 2-3 minutes, then add minced ginger, stir really well to combine, sauté about 1 minute, then add brown sugar stir in then add all the liquid ingredients and ½ of the red pepper flakes, stir really well to combine all the ingredients, cover and bring to a low boil then turn the heat off and the chicken pieces back in and stir really well, also add the remaining red pepper flakes.
