Creole Cajun Red Beans

This is served with white rice, but as my husband says he could just eats loads of it just by itself. It says it is like chili.Perfect for the fall/winter season. If you cook your beans stove top, that should cut your cooking time down at least 3 hours, but why, when you can take care of business while cooking them in the slow cooker.

Ingredients

  • 1 ½ cups dried kidney beans
  • 1 1lb smoked sausage ( sliced in desired size)
  • 1 onion (diced)
  • 2 cloves of garlic (minced)
  • 3 sprigs fresh thyme
  • 1 cup chopped bell peppers( I used red and green)
  • 5 cups of water
  • 1 tbsp olive oil
  • 2 tbsp butter
  • Salt n pepper to taste
  • 1 tsp cayenne pepper( can use more if you like , you should not if you also use a hot sauce)
  • 1 tbsp hot sauce of choice ( I used the Jamaican scotch bonnet )
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp old bay seasoning
  • 1 ½ tsp Creole seasoning
  • 1 tsp garlic powder

Instructions

  2. Clean and wash beans, Add beans with 4 cups of water in a crock pot, cook on low for 6 hours, or high for 4 hours. When done, using a stock pot, heat olive oil, brown sausage on each side, ( about 1 to 2 minutes on each side), remove and set aside on a plate. Add the butter, when butter melts, add the onions and garlic, saute till softened about 3 minutes, then add the bell peppers and stir to combine, let bell peppers cook for 3 minutes, add the fresh thyme and stir, add the brown sausage back in stir to combine and let cook together for about 5 minutes just so they can flavor each other ( lol), remove the cook beans from the slow cooker and add to stock pot, add the remaining cup of water, and all the dry seasonings, stir really well to combine, cover and simmer for about 30 minutes.

Notes
