Simple Homemade Potato Hash

This is a great dish for breakfast, but also a great, yet simple side dish for dinner.

Ingredients

  • • 4 regular size potatoes ( I used the Yukon gold )
  • • ½ small onion ( diced)
  • • 1 garlic clove ( minced)
  • • 1/3 cup dice green and red bell pepper
  • • Salt n pepper to taste
  • • 3 tbsp olive oil ( divided 2 n1)
  • • 2 tbsp butter
  • • Small piece of sausage diced ( if using for breakfast)

  2. Peel potatoes ( If you use russet potatoes, you can leave the skin on , wash really well. Dice potatoes to bite size pieces. In a bowl suitable for the microwave add potatoes with 1 tbsp oil. Use your hands to coat the oil really well into the potatoes, cover with a plastic rap and microwave about 6-8 minutes. In a skillet , heat remaining 2 tbsp olive oil with butter, add minced garlic and onions saute for about 3 minutes, then add bell peppers, and sausage saute another 2 minutes. Add the potatoes, salt n pepper, stir and combine really well, cook for another 5 minutes. If you choose you can add shredded cheese as well.

Notes

If you are serving this as a side dish for dinner, then you would perhaps leave out the sausage, but I am sure it is fine then too.
