I do not know about you, but one of my favourite things around the holidays is smell of cinnamon, nut meg and spices in the kitchen. It awakes something in you .I do not think it is ever too early to start baking holiday recipes, it puts in you a good mood, and you get to eat delicious, decadent and divine baking goods. This sweet potato bread goes so fast in my house. I like to have a slice in the morning with a cup of coffee or later on for brunch with a glass of ice coffee. The kids with hot or cold chocolate, or even for desert. The kids and my husband will go into the kitchen to get a snack and that is what they grab.

  • 1 medium size sweet potato
  • 2 cups all purpose flour
  • 1 ½ cups light brown sugar
  • ½ tsp salt
  • 1 tsp cinnamon powder
  • 1 tsp ground nutmeg
  • 1 ½ tsp vanilla extract
  • 2 tsp sweet browning mix( optional)
  • ½ cup raisins ( optional) This is optional because my children are not fan of raisins
  • ¾ cups of buttermilk
  • ½ cup canola or vegetable oil

  1. Preheat oven to 350
  2. I peeled and gratered the coconut with a hand grater,( that must be the Jamaican in me)
  3. You can either bake the potato and once it is cooled you remove it from the skin, another option I see online a lot is you peel and dice the potato int small cubes and add maybe 1 tbsp of water to it in a bowl, cover with plastic wrap and microwave for 20 minutes, then use a fork to smash the potatoes. Do what is best and maybe easiest for you. In a separate bowl combine the flour, sugar, baking powder, salt, nutmeg and cinnamon and mix really well to combine, whisk the two eggs and in a separate bowl or in a large measuring cup pour it with the butter milk, vanilla extract and oil, whisk and combine real well, Pour the liquid mixture in the bowl with the smash or grated sweet potatoes, using a wooden spoon, mix and combine really well. Then in batches pour that mixture into dry ingredients about a cup at a time, and everytime using the large wooden spoon be sure to mix really well to combine. When you are done, then if you chose to use raisins, add the raisins in and combine, be sure to look at the bottom of the bowl, and the sides making sure there is no dry ingredients still needing to combine. Grease your bread pan and bake for 1hr15 minutes , let cool for about 10 minutes before removing it from the baking pan.
