This is a simple weeknight meal, but because I love for the girls to join me in the kitchen I usually make this one of our fun friday meals. Because with school back in session they cannot join me in the kitchen on weeknights, too much homework.

  • • 4 boneless skinless chicken breast
  • • Salt n pepper to taste
  • • 1 tsp cayenne pepper
  • • 1 tsp garlic powder
  • • 1 tsp poultry seasoning ( optional )
  • • ½ red, green, yellow bell peppers( sliced in desired slices )
  • 1 medium onion ( sliced)
  • 3 cloves of garlic ( minced)
  • 4 tbsp olive oil
  • 3/4 stick of butter ( divided ½ n ¼)
  • Tortilla of choice ( I used plain flour tortilla)
  • Shredded cheese of choice

  2. Wash chicken in water and lemon juice or water with white vinegar, pat dry each piece of chicken breast. Cut into thin slices. Season chicken with salt n pepper, garlic powder and cayenne pepper. Heat olive oil in skillet, brown chicken pieces, in batches, about 2 – 3 minutes for each piece. Set aside on a plate. When you are done browning the chicken, using the same pan not cleaning it, add ½ stick of butter, when the butter melts add slice onions and minced garlic, saute for 2-3 minutes until softened, then add bell peppers, stir and combine really well, add poultry seasoning and stir to combine, saute for about 3 minutes stirring constantly, add the brown chicken pieces back.

Now it is time to make your quesadilla, I heat small pieces of the remaining butter in a flat skillet, then heat each tortilla on each side then add cheese, some of the chicken and vegetables, then more cheese, cover and then flip. I cut each tortilla in to 3 pieces each, serve with sour cream and baby carrots.

Here is a great tip, you do not have to use all of the chicken and vegetables for Quesadilla, you can leave some for say serve with some pasta or just add some vegetables, like broccoli and carrots and you have a stir fry if you the parent want something healthier, I do that for me and my husband all the time.
