Jamaican Curry chicken with carrots and cabbage

in Jamaica, as you know chicken curry is one of our most popular dishes, and steam cabbage is our favorite vegetable, Well here I combined the two.
  • Ingredients
  • • 3lbs chicken thighs ( boneless skinless)
  • • ½ of a cabbage, sliced
  • • 3 carrots peeled and diced
  • • 1 sprig fresh rosemary
  • • 1 sprig fresh thyme
  • • 2 Roma tomatoes ( diced)
  • • ½ green bell pepper sliced
  • • 1 tsp minced garlic
  • • 1 medium onion sliced
  • • 2 tbsp olive oil
  • • ½ stick of butter
  • • 1 tsp salt
  • • 1 tbsp black pepper
  • • 1 tsp old bay season
  • • 1 tsp creole season
  • • 2 ½ tbsp curry powder
  • • 1 tbsp red pepper flakes ( cayenne pepper) Use as little or as much as your family can take.
  • • 1 tbsp adobo all-purpose seasoning ( or seasoning salt
  • • 2 cups water
  1. Direction
  2. Soak chicken in water with vinegar or lemon. Then trim excess fat, cut each piece into 2-3 pieces. Season with all of the dry seasonings, and with gloves on, rub the spices into meat really well. If you have time, cover to marinade at least 1 hour. In a large saucepan with lid, add olive oil, butter when butter melts, add minced garlic and sauté for about 2 minutes, then add the seasoned chicken, stir to combine really well, cover and cook for 15 minutes, stirring every 5 minutes. After 15 minutes add 1 cup water and cover and stir cover and cook another 10 minutes. Add another cup of water, Then add onions, bell peppers, carrots, thyme, tomatoes, rosemary, stir and combine really well cover and cook 5 minutes, then add cabbage and combine really well, using tongs. Note: ( I like my cabbage to still have a crisp to it, so I only cook it here maybe 3-5 minutes, it is totally up to you.
