One Pot Meals are the best. They are usually time saving and not having but one pot to clean after a delicious meal what is better than that.
  • • 2 boneless skinless chicken breast ( wash clean and cut into strips)
  • • 1 lb shrimp ( uncooked and deveined)
  • • 1 can fire roasted diced tomatoes
  • • 1 cup chopped carrots
  • • ½ large onion diced
  • • ½ cup bell peppers( whatever color you have) Recommend using 2 different colors
  • • 2 sprigs fresh thyme
  • • 1 sprig fresh rosemary
  • • 1 tsp minced garlic
  • • 2 cups chicken broth ( low sodium)
  • • 5 tbsp olive oil ( divided 3n1n1)
  • • ¼ stick of butter
  • • Cajun seasoning
  • • 3 cups uncooked long grain rice
  • Note: I made my own Cajun seasoning here are the lists of ingredients I used, I added all the ingredients in a bowl and mix really well.

  • • Creole seasoning
  • • Old Bay seasoning,
  • • Onion powder
  • • Chile powder
  • • Cumin
  • • Garlic powder
  • • Cayenne pepper
  • • Paprika

  2. Wash chicken breast in water with vinegar or lemon juice. Pat dry with a clean towel, remove excess fat and cut into strips. Season with some of the Cajun seasoning mix, about 2 tbsp worth also add about 1 tbsp of olive oil, this helps the seasoning to really stick to the chicken pieces. In a separate bowl wash shrimp in lemon juice and water, part dry and season with some of the Cajun seasoning, about 1 tbsp and 1tsp, leaving about 1tbsp for later, Cover both the seasoned chicken and shrimp and refrigerate at least 30 minutes. In a large pan with lid heat 3 tbsp olive oil, brown chicken strips, about 2 minutes on each side, ( this will need to be done in batches), Set aside on a plate, then do the same with shrimp, again set aside on a plate, when done, add butter to the pan, ( do not mind all the nice brown stuff in the bottom of the pan, once the butter melts add the minced garlic and diced onions, saute about 3 minutes, then add bell peppers saute another 3 minutes, add thyme and rosemary, then canned tomatoes, stir and combine really well, let cook together for about 5 minutes, then add carrots and chicken broth, cover and bring to a boil, add uncooked rice, cover and cook 10
