Growing up in Jamaica season rice is a staple since coming to America I’ve realized the famous paella is a lot like what we call season rice in Jamaica.
Ingredients
  • • 2 cups uncooked rice ( basmati Jasmine ) washed
  • • A small piece of pumpkin ( about 1 cup after cooked and chopped)
  • • 2 carrots ( peeled and diced ) about ½ cup
  • • 2 ½ cups chicken broth ( low sodium)( water is fine)
  • • 1 cup chopped ham
  • • 1 medium onion ( diced)
  • • ½ tsp garlic powder
  • • 2 green onions ( cut into about 3 pieces)
  • • 2 sprigs fresh thyme
  • • ½ green and red bell pepper ( diced)
  • • 1 tbsp olive oil
  • • ½ stick of butter
  • • Salt n pepper to taste
  • • 1 tsp all-purpose seasoning
  • • ½ tsp roasted garlic powder
Instructions
  1. In a stock pot, heat olive oil then adds the butter, when butter melts, add diced onions and minced garlic, sauté about 2 minutes, then add ham and stir to combine really well, let cook for about 5 minutes, stirring constantly. Add diced bell peppers and, carrots, thyme, stir really well to combine. Cook together about 8 minutes, then add dry seasoning, stir and combine really well, Add chicken broth or water, cover and bring to a boil. Add wash rice, cover with foil paper, then the lid for the pot, let cook for 20 -25 minutes without stirring.
