Jamaican Style Paella


• 1/2 lbs boneless skinless chicken thighs ( cut into bite size pieces)

• 1 lb small shrimp (peeled and deveined) You can use some medium or large size shrimp

• 1 lb imitation crab

• 1 medium onion diced

• 2 garlic cloves ( minced)

• 1 green onions( cut in about 3 pieces)

• 2 tsp crab oil ( this is optional )

• 2 tbsp canola oil

• 1½ stick of butter

• 1 ½ tsp adobe all purpose seasoning

• 1 ½ tsp black pepper

• 1 ½ tsp cayenne pepper

• ½ tsp Creole seasoning ( divided ¼ n ¼)

• 1 tsp old bay seasoning ( divided ½ n ½)

• Pinch of chicken bouillon cube ( a little less then ½ of a large one )

• 1 tbsp hot sauce ( I used the scotch bonnet in a bottle, use what you have)

• ½ cup chopped carrots

• 2 cups chicken broth

• 1 cup water

• 1 tsp cab oil

• 2 cups uncooked Jasmine Rice


Wash chicken pieces in water with white vinegar or lemon juice. Season chicken pieces with 1 tsp black pepper, 1 tsp adobo all purpose seasoning, 1 tsp old baby seasoning and ½ tsp cayenne pepper. Season shrimp with ½ tsp adobo all purpose seasoning, ½ tsp Creole seasoning, ½ tsp black pepper, ½ tsp old bay seasoning, 1 tsp crab oil. Season, crab meat with exact same seasonings as shrimp including, the remaining 1 tsp crab oil if you use it. Using a pot with a lid, heat olive oil on medium high heat, brown chicken pieces on each side, till you have a nice golden color, do this in batches, about 32-3 minutes on each side, put too much in the pot at once, will cool it down and cause chicken to stick to bottom of pot. Set brown chicken pieces aside on a plate, do the same with shrimp, only less time, about a minute on each side. Set shrimp aside on a plate, then in the pot without cleaning it ,add the butter, once the butter melts , sauté the minced garlic and diced onions until softened, about 3-4 minutes, then add the chopped carrots, thyme green onions and stir really well to combine. Add all the liquids, water and chicken broth and hot sauce, , bring to a boil , add the piece of chicken bouillon and be sure to mix till it is cooked out. cook on low for about 6 minutes, then add wash rice, cover and cook for 20 minutes, then add the shrimp, stir softly with a fork so the shrimp is mixed in , cover and cook another 5 minutes, turn the heat off, then add the crab meat, stir gently with a fork to combine, cover and the heat will penetrate the crab meat
